A Break From Life at the Farm and a Cocktail Themed Vacation in Disneyland

A lot has happened since my last blog in the beginning of February. I was fortunate enough to get invited to the family Disney trip again. I went last weekend with two of my sister in-laws, four of my nieces, one nephew, his wife and their significant others. It was a nice distraction from the sadness that I have been feeling about losing four of my pet chickens.

I am sharing my Disneyland experience with you since it is not like any other. Exactly a week ago, at 7AM, my husband Ken drove my sister in law Kathleen and her two daughters Keri and Jamie to the Oakland Airport.He saved us a lot of trouble and cost not having to drive ourselves and drag our luggage from the extended parking lot near the airport. We were surprised to see the huge line going through security. Luckily, all of us have Pre TSA and were able to fly right past them in our own special line. The process of qualifying for the Pre TSA is paying extra money and showing your passport and ID ahead of time in a screening process. It’s totally worth it, in my opinion.

We stopped off for mimosas, waffles, oatmeal and fruit at the Escape Lounge which is affiliated with American Express. It is all free to members and their guests. This is a special way to begin your vacation and I feel fortunate to be traveling with my sister-in -law who is a member.

We boarded the flight without any complications and landed at the Santa Ana Airport at 11:00AM. We were given strict instructions to not remove our masks during the flight so we wouldn’t be exposed to the CoronaVirus.Since I was staying in the same room as Kathleen, I needed to be safe. After we landed, my niece called an Uber driver to take us to the Grand Californian Hotel next to Disneyland. This hotel is gorgeous. It has every amenity you can think of: Pools, jacuzzi’s, a spa, a fireplace, a bar, restaurants, a grocery store, and more. My sister in law always pays for the hotel for the family. She is extra generous to me, her daughters and to the Louie family. I wouldn’t normally be able to afford this kind of luxurious vacation. I love going with her and her daughters and my other sister in law and her family because it is extra special family time. It’s worth mentioning here that we haven’t had many family get togethers the last two years because of Covid. Before Covid, we would celebrate birthdays and see each other at least once a month.

We dropped off our luggage at the hotel even though our rooms weren’t ready. Check in time is usually at 4PM, and the front desk will text you when the room is ready. Until then, the bellhop will store your items in a secure place. Next we entered Disneyland park and went to our pre scheduled reservation at the Plaza Restaurant. The four of us shared the fried chicken platter served with mashed potatoes, green beans and a buttery biscuit and we ordered a huge piece of the dark chocolate cake (shown above). It was a large amount of food and plenty for the four of us to share. My niece Jamie grabbed two corn dogs from the Little Red Wagon next to where we were sitting for us to share. These corn dogs have the best cornbread covering. It’s enormous! I tend to purchase a lot of the food since I know it helps Kathleen with the cost of the trip. We were asked to download the Disney app ahead of time to be prepared to purchase items from the stores, bars and so we could get our lightning pass tickets. These were previously called fast passes. You pay extra for these and get a limited amount of them per day. Again, Kathleen managed all of our rides on her app the entire vacation. She was on top of it, always looking to see if a ride was open or closed. She also prepares much of the itinerary before we arrive, by booking all of the restaurants and bars for each meal. This is all new. Disneyland has changed a lot since the pandemic began. They had to close down for a year. 

Thunder Mountain Railroad was our first roller coaster ride of the day. Buzz Lightyear was our next ride. Of course we didn’t stand in long lines because Kathleen is smart and has a strategy of when to go on which ride most efficiently. We stopped for a pickle for Jamie because it’s her favorite snack of all time. They are big and juicy and hard for her to resist. Personally, I’m a sweet pickle kind of girl and usually only eat them when I’m making tuna salad sandwiches. 

Off to California Adventureland Park where we went on Soarin’. This ride is especially fun and involves a fantastic airborne hang gliding flight which takes you through the wonders of the world. Web Slingers located in the Avengers Campus was the next obvious choice since it is the new Marvel Spider Man Adventure interactive screen ride where you wear 3 D glasses. There is a huge wall outside of the ride where spider man flies around doing aerial somersaults for the audience and people walking by. It’s very cool and popular for the little ones. I’d also mention how funny it is to see many of the children wearing costumes while in the parks. It’s hilarious to me when you see a toddler sound asleep in a stroller wearing a complete Spider-Man costume including the mask. Many of the little girls are wearing princess dresses and have their hair pulled tightly up into a bun with a tiara on their head. You really feel like a kid walking around seeing the magic all around you and remembering how you felt when you were a child in Disneyland. It’s so exciting.

The girls were ready for some shopping time. They thought that they could order clothes and have them delivered to their hotel, but that option wasn’t available this time. Kathleen uses her Disney credit card all year long and gets points to use towards the restaurants and merchandise at the stores. It’s a win win for my nieces who appreciate wearing all of Disney’s attire. Kathleen actually purchased matching Disney sweatshirts for the four of us to wear during the trip. She thinks of everything, and I love being spoiled by her.

We were thirsty, so we ordered drinks from the phone app from Pym Tasting Lab. They give you a time to pick them up and you tell them when you arrive. Our drinks were ready and we sat and drank four outstanding cocktails. I had the “Molecular Meltdown” a Garage milk stout with vanilla ice cream and marshmallows. Keri and Jamie and Kathleen had the X-Periment drink with Patron Silver Tequila, mango and habanero syrups,  and mango flavor filled boba. These were so good that we went back for more throughout the weekend.

Goofy’s Sky School roller coaster was up next because Incredicoasters ride was down. I didn’t remember going on Goofy’s Sky School before. It was twisty and turny and jerky. Not my favorite, so I skipped it the next time the group wanted to go on it. Matterhorn was our next ride. I was terrified of this rollercoaster when I was young, but decided to go for it and go with the flow. It was fun. It’s even more fun at night.

I talked the group into the Winnie the Pooh ride. He’s my favorite Disney character. I love the music on this ride. Rabbit, Piglet, Tigger, Roo, Owl are cute and colorful and fun. I’ve always read these stories to my kids and provided videos for my oldest son Curtis to watch when he was a little guy while I cleaned houses.

We ate at the Blue Bayou Restaurant for dinner. They offer only a few choices and have a New Orleans cajun style menu. We shared the steak and salmon which they cooked perfectly. It’s also right next to the Pirates of the Caribbean ride and it is a little dark but has many hanging lights. It’s very relaxing after a long day of running through the parks. Of course Kathleen had dinner reservations for us that she made ahead of time.

Keri, Jamie, Kathleen and me were all very excited to check out the new Star Wars ride “Rise of the Resistance.” It was an epic attraction and worth the purchase. Space Mountain was where we headed to next. This ride brings back so many memories for me because my son Curtis hated this ride when he was about 5 or 6 years old. He spitted and said it was “stupid, stupid, stupid!” We shouldn’t have tried to go on it with him. He has been scared of roller coasters ever since and this is why he doesn’t come with us to Disneyland. I don’t think he would enjoy all of the walking either. Turns out, we walked 22,000 steps that day according to my niece’s Apple watch. We landed at the pool bar called GCH Craftsman next to the Grand Californian Hotel where we were staying. We met my sister in law Terri Ann, her daughter Laura and Laura’s girlfriend Fiona at the pool bar. Eventually, my nephew Peter and his new wife Alex joined us. It was nice to connect with more of the family. I had a chocolate sundae since I don’t like to drink too late into the evening. It wasn’t that great as far as chocolate sundae’s go. The whipped cream tasted fake and it wasn’t sweet and there wasn’t enough chocolate sauce in it. But I’m a chocolate snob, so there’s that.

It was back to the hotel room to catch some zzz’s. I like to shower before bed, so I can be clean when I get into clean sheets. I’m not a morning person, so I get as organized as I can by laying out my clothes and having everything ready for when the alarm goes off.

I will have to continue this blog at another time. I have three more days to write about plus details about my sister in laws strategy to get in as many rides as possible each day. And cocktails! Lots more cocktails! I will leave you with this funny photo taken several years ago in Cancun when all three of our families the Van Winckels, The Louies, and the Smyth’s went on vacation together. Biking in Napa for Calamari and Hazelnut Dacquoise

Spent the day in Yountville and Napa with my friend Ana bike riding and eating at some of my favorite restaurants. The rain in Northern California has been non stop, but we had a break in the weather that day and biked until our hearts were content. We stopped for a late lunch/early dinner at Bistro don Giovanni, dessert and beverages at Auberge du Soleil, then a quick stop at the Cia Copia and OxBow Public Market to complete the perfect day.

 

Ana and I were originally going to ride bikes to Danville for lunch at SideBoard a neighborhood cafe. When I heard they closed, I shifted our bike ride to the Napa Valley so I could check out Farmstead Restaurant at Long Meadow Ranch in St. Helena.

 

We set out North on our bikes after parking in the town of Yountville. We brought our own bikes even though you can easily rent them. I stopped to ask for directions at a bed and breakfast in town and the clerk Googled and even printed me a map towards our destination.

Unfortunately, after several attempts and ending up off the beaten path on to rocky surfaces, we decided to ride South towards Napa instead on the designated Napa Valley Vine Trail. It was refreshing to finally be on a flat safe surface in a clear direction.

We had been riding for over an hour and a half and we needed food in our bellies. Luckily, Bistro Don Giovanni was nearby, so we rode our bikes there. Well, not directly there, since I thought we could sneak in through a vineyard. That wasn’t going to happen since there were barbed wires surrounding the property. Through the mud we rode, until we finally found a newer property that had a paved road. Phew! Boy were we glad to see that.

 

Eventually we drove through a quaint older Napa neighborhood and onto Hwy 29 for a block to get to the restaurant. Ana and I were fortunate that they still had an available table to seat us. The food was exceptional as usual. We shared their short rib, cipollini onion, asparagus pappardelle special and fried calamari with green beans, fennel and onions. So tasty. Ana had a Merlot from Whitehall to drink and I ordered a Cabernet from Frank Vineyards. Food always tastes better after a long bike ride and Ana had never had fresh pasta from California before. Here’s a Chef’s Salad Recipe I made.

 

Obviously, we took a shortcut back to the bike path on the way back to Yountville, but had a good laugh about our earlier excursion through the vineyards.

 

Next was a quick ride through the small town since we weren’t quite ready to abandon the bikes. We saw the brand spanking new Villagio Hotel  conference/wedding venue which is spacious and gorgeous. Atelier Fine Foods was catering a Yountville Chamber of Commerce networking mixer at JCB Salon Prive’ with focaccia and a huge platter of cheese, olives, charcuterie and of course wine. We didn’t stick around long enough to imbibe.

Back to the car with the bikes we went, and headed for our Farmstead Restaurant. The only problem I have with taking friends to Napa is getting side tracked by all of the other phenomenal choices to experience. This time I stopped at Auberge du Soleil off the Silverado trail which is a part of Relais & Chateaux. This property sits high on a hill and looks over the Napa Valley. The view is spectacular and the restaurant is Michelin rated.

Since we didn’t want to spend a lot of money on food, we took a seat at the bar. They have a wide selection of fancy cocktails, beer on tap, and wines of course, but we ordered the non-alcoholic Ipanema: A refreshing drink consisting of ginger ale, fresh muddled lime and sugar. Since we weren’t hungry, we settled on their famous Auberge Torte au Chocolat : A hazelnut dacquoise (a fancy name for a almond hazelnut and meringue cake), gianduja mousse and vanilla gelato. I’m pretty sure it was the BEST dessert I’ve ever had. The good news is they sell them and will ship this chocolatey decadence all over the world. And one piece cost $17.00 which we shared, but it was worth every penny. Pastry chef Paul Lemieux has a lot to be proud of and I will happily follow him on Instagram.

Feeling generous, Ana bought 9 of their freshly made cookies so we could bring my Mother and Step Father some goodies. I have to say, the oatmeal cherry were my favorite, but the peanut butter and chocolate chip ones were delicious too. Yes, we ate most of them before we got to the car!

Losing our appetite for Farmstead, we headed home. Again I took a detour and stopped at the Culinary Institute of America Napa. I took Ana upstairs to the cooking school where there was a class that was assembling dumplings.We also walked through the fascinating Chuck Williams Culinary Art Exhibit featuring over 4000 artifacts of specialty cookware used by great chefs in Europe.

Next to the Cia Copia is OxBow Public Market where there is practically every kind of food and drink available to consume. We walked around Whole Spice Company, Napa Valley Distillery, Fieldwork Brewery, Annette’s Chocolates and many more foodie destinations. At least Ana will know where to go when she entertains her out of town guests in a few weeks.

 

Let’s just say, Napa Valley has captured my heart. I’m never disappointed by the hospitality and generosity they offer their tourists and people like me. Sometimes the wine country is calling me and I have to escape the Bay Area. Is it calling you? You will come back feeling rejuvenated from all of the good food, great wine and clean country like charm it offers. Can’t wait to go back. Maybe next time I will actually make it to Farmstead at Long Meadow Ranch.

Autumn Feast: Pumpkin Seed Pesto Caramel Apples and Apple Turnover Recipe

I had the pleasure of joining my friend Lise and her husband at their property in Tahoe a couple of weeks ago. Lise had never been to Apple Hill in Placerville, and I wanted her to experience it, so she invited me up to her property after. After that excursion, we spent a couple of days cooking together, eating out at local restaurants, entertaining and exploring the cute town of Genoa Nevada.

I met Lise while hiking the trails of Mount Diablo a few years back. She is a nutritionist and I love learning more about the health advantages of food. We can talk for hours about recipes and baking. And of course, we walked a lot while on this vacation. Sadly, my husband couldn’t join us because of his work.

 

First off, we stopped at Boa Vista Farms, where we bought decadent blueberry dumplings, blackberry dumplings, apple turnovers, and this is where we watched these caramel apples being made. Here’s the blog I wrote on my first trip there. They have everything apple. It’s quite a fun place to visit. Lots of activities for the kids and plenty of fresh fruit to purchase. My friends loved it so much that they wanted to go back to explore more farms on the way home.

 

Next, we drove to Carl and Lise’s home. It was lovely and we promptly took their cute dog for a walk around the neighborhood. For dinner that night we ate at David Walley’s Restaurant and Saloon. I had their French Dip and green salad and my friends had the ribs. It amused me to experience eating at a saloon. My friends told me that ordering a meal at the bar is much cheaper than eating at the restaurant especially if it is happy hour. And the food was really good. I had a beer on tap served with sliced oranges, my go to drink. I would recommend this place to anyone who needs to fuel their bodies and they have a resort on site for people that need a place to stay.

 

The next morning, Lise and I proceeded to take the family dog on a jaunt before cooking up a storm. The neighborhood is still being developed and  cottontail bunnies, jack rabbits, coyotes, rattlesnakes and scorpions are known to be living in the vicinity as well. This information made me a little on edge, since I’m not a huge fan of snakes. Luckily, we only came across one baby one in the middle of the road and he was harmless.

 

So when packing for the trip, I grabbed a few ingredients that I had in my fridge. I brought along plenty of fresh tomatoes, jalapeno peppers, canned olives, fresh corn, roasted beets, goat cheese, mandarin oranges, pistachios, bib lettuce, some of my homemade apricot jam, cheese and crackers for a cheese platter, refried beans,tortilla chips, sour cream, candied pecans, and herbs from my garden. I never leave the house without plenty of food.

Little did I know, Lise had invited guests over for dinner, so my provisions came in handy. We spent the morning making corn salsa, a bean dip, zucchini quesadillas with pistachio-pumpkin seed pesto, and coleslaw. Oh my! The food we made was over the top stupendous. Lise’s guests were blown away by our appetizers, beet salad and main dish quesadillas. All of it was made with love and you could taste it in the food.

Before the day got away from us, we headed town to tour Grover Hot Springs where we hiked around for a while. Feeling a bit hungry we stopped for lunch at The Pink House Cheese and Charcuterie Shop & Restaurant. We were amazed by their Fall menu selections as well as their selection of specialty foods smartly displayed on cute wooden shelves. Not only was this place located in an old victorian building, but their dishes were outstanding. I had their pork meatball on top roasted spaghetti squash and marinara, and Lise enjoyed their salmon burger with coleslaw, green salad and potato leek soup. Our waiter bragged about the chef from Philadelphia who was known for his meatballs. I found them a little bland, but they served it with a herbed goat cheese on top which made perfect sense.

 

Next was a quick stroll through the town of Genoa, where we walked by their country store, and Nevada’s Oldest Saloon where they have Sunday entertainment called porch parties. Of course there was an antique shop and my favorite store Sierra Chef Italian Pastries, (Purveyors of Bently Ranch Meats), which served coffee, tea plenty of goodies. You can also take cooking classes there! I was thrilled to see all of their ingredients stored on shelves in glass jars and their spices were stored in huge glass bottles. They must go through a lot of seasonings.

 

We were tempted by all the freshly baked goods, but don’t forget I was with a nutritionist. And we still had plenty of pastries left from Apple Hill.

 

Last stop was the Courthouse Museum where Lise and I browsed antique quilts, dolls, teddy bears, jail cells from 1865, the post office and the Genoa courthouse. I felt like I was back in an old western movie seeing how the small community lived way back when.

 

Back at the house, Lise and I prepared the remaining dishes for her friends who were about to arrive. Among the appetizers were corn salsa with avocado, candied pecans, bean dip with tortilla chips, and a cheese platter with my apricot jam and pineapple pepper jelly. Lise’s dinner entree of zucchini quesadillas with pumpkin seed pistachio pesto was exceptional and my roasted beet, goat cheese, mandarin orange and pistachio salad was delicious too. The evening went by too quickly for us all, but good memories were made.

High Hill Ranch was our destination before heading home where we collected apple and pumpkin donuts and a huge box of Autumn Glory Apples. They have been going fast in my house mostly because I love apple turnovers. Recipe below.

 

Fun was had by all during my mid week excursion in Tahoe. Lise and Carl were generous to let me stay with them and I’m thankful for their hospitality.

If you haven’t been to Apple Hill yet, it’s a must this time of year. Go hungry and take a few friends. They won’t be disappointed.

 

Apple Turnovers

Ingredients for filling:

3 or 4 Apples thickly sliced (depending on size about 3 or 4 cups)

1 C crushed Flaked Corn Cereal

1 C Granulated Sugar divided

1 t cinnamon (Penzey’s brand is best)

½  t ground ginger

½ t ground cardamom

½ t ground cloves

1 stick of unsalted butter (1/2 Cup) Cold cut into chunks

2 T Rum or Brandy

1 egg whisked in a small bowl

 

Mix ½ C sugar with spices and set aside.

Put cut apples in a bowl and pour rum or brandy over. Set aside.

Pastry:

3 C Flour

3 T granulated Sugar

1 tsp kosher salt

8 Tbsp cold unsalted butter (1 stick)

¼ C. Shortening

3 Tbsp  H2O

1 egg, lightly beaten

2 tsp white distilled vinegar

Directions for making Pastry

  1.  In a  large bowl combine flour, sugar and salt. Using a pastry blended and working quickly to prevent butter from melting into flour, cut in butter and shortening until mixture resembles coarse crumbs. (or put mixture in food processor and pulse until combined) Another pie recipe here:Strawberry pie
  2. In a small bowl combine water, egg, and vinegar. Stir to mix. With a fork, mix egg mixture into flour just until dough clumps together and moist enough to pat together. If dough is dry and crumbly, add more water 1 Tbsp at a time. Dough should not be wet or sticky. (I use the food processor and pulse until combined.)
  3. Wrap and place in fridge for 30 minutes to rest.
  4. Turn out dough onto a lightly floured surface and roll with pin to flatten and cut into rounds about the size of the palm of your hand.
  5. Sprinkle each round of pastry with 1 T sugar, then 1 T crushed corn flakes. Lay 4 or 5 slices of apples on center of sugar. Sprinkle again with 1 T cinnamon, sugar mixture. Bless each turnover with 1 T butter and fold over pinching the seams. Place on a sheet pan lined with parchment paper. Proceed to make all turnovers until all pastry is gone and no apples are remaining. Brush with whole egg and sprinkle again with sugar.
  6. Bake in preheated 400 degree oven for about 15-22 minutes until brown and bubbly.

Serve warm with vanilla ice cream.

Farm to Fork in Napa, St. Helena and Yountville and Asian Salad Dressing Recipe

My husband and I had the pleasure of hosting our Florida friends last week. Sherri and I went on the very first Avon three day walk together almost twenty years ago and have been close ever since. Today’s blog will be about our day in Napa and Yountville with our two son’s Danny and Andrew. We explored Ashes and Diamonds Winery, V Sattui, Napa Valley Olive oil Company, and Rutherford Grill Restaurant for lunch. Then we circled back and took on Lucy Bar in Yountville for drinks and shopping in the Marketplace. It was marvelous day showing them around Northern California wine country.

 

 

Having no idea where to begin, we drove for an hour along Hwy 29 and stumbled upon Ashes and Diamonds Winery which is the newest winery in the Napa Valley and is directly behind Don Giovanni Restaurant. I remembered I was given a free tasting the last time I ate there with my friend Cathy. Here’s my blog on that magnificent day.

This place is exquisitely decorated and the wine was robust and full bodied. Sherri and Andrew had tastings (since I was driving), and we all sat and listened to their jazz music. The vibe was fun and exciting. Of course I’m always energized when I get to try a new place. They also served a delicious poppy seed and sesame seed focaccia which hit the spot in our bellies.

Next we stopped in to V Sattui where we sampled their vinegars and cheeses. It’s a bustling place with people from all over the world buying deli sandwiches, extraordinary cheeses and refreshing wine for their romantic picnic lunches under the ancient oak trees. If you haven’t experienced this delightful place, it’s a must see for sure.

After hopping back into the car, we found Napa Olive Oil Manufacturing Company in St Helena which I have always wanted to tour. This place has been around since 1931 and has all sorts of items a foodie like me would like to enjoy. I purchased a gallon of their olive oil and blackberry ginger vinegar to take home. Sherri, Andrew and Danny loved tasting their offerings also.

Rutherford Grill was our next stop where we splurged on their French dip sandwiches, smoked salmon, ribs, roasted chicken and more. It was familiar to my guests since they had been to a similar restaurant called Houston’s in Dallas Texas. I highly recommend getting a reservation since it is always a local favorite while in St. Helena.

It didn’t take long to decide where to take them next since we were short on  time. After all, we had dinner guests (Heidi, Sharon, Lisa, Elyse, and Bill) coming at 6:30PM that evening to welcome Sherri and Danny back. They had lived in our neighborhood twenty years ago, before moving to Florida and had made friends while here. So on to Yountville we went.

Lucy Restaurant and Bar at Hotel Bardessono is a relaxing place to sit and relax while enjoying an artisanal cocktail or “field to fork” fare from their innovative, garden inspired cuisine. Since danny was driving, we sat outside on their comfy patio couches. I had a glass of kahlua and Sherri had a ginger ale while Andrew took a nap on their hammock and Danny made a phone call. We walked to their nearby gardens where we found a loaded O’ Henry peach tree that had many peaches on the ground. Four ended up in my bag because I can’t stand to let anything go to waste, and they were enjoyed (after cutting off the bruises) with our dinner the following evening.  It was a fun way to end the foodie farm to table experience.  

The potluck dinner chicken wings, hummus and fried pita chips, baba ganoush, fruit salad, taquitos with guacamole, and wine with our friends was delightful. Everyone was thrilled to see Sherri again and Danny loved meeting them since he was only 4 when they left the Bay Area. More blogging adventures are sure to be coming in the near future since we had day trips to San Francisco, Berkeley, Sausalito, downtown Walnut Creek.

Asian Sesame Cilantro Salad Dressing

Ingredients:

½ C Seasoned Rice Vinegar

1 Bunch fresh cilantro stems and leaves washed (can substitute fresh parsley if you dislike cilantro, but will taste different)

2 cloves garlic (sauteed whole in 1 T canola for 2 minutes)

3 T fresh chopped ginger

¼ C apricot jam

6 green onions chopped

1 fresh squeezed lime, orange or lemon

½ C plus 1 T canola oil

½ C peanut oil

2 T sesame oil

⅔ C soy sauce

½ t black pepper

½ t chili oil

Directions:

Blend all ingredients in a blender until combined. Refrigerate. Will keep for 2 weeks.

I use this dressing to marinate skirt steak, or chicken. It is best served along with roasted chicken, white fish or in a salad. Make a green salad with mandarin oranges, almonds, maruchan noodles, chicken or steak. It’s delicious!

Family Foodie Vacation and Art in Truckee

Spent my birthday weekend at my sister’s friends house in Truckee last weekend. It was a fun filled time hiking, sleeping in (my favorite), board games, barbecuing nice meals and checking out Northstar Resort and The Ritz-Carlton Resort. My sister Susan, her friend Lori, my husband Ken, my and niece Marie and nephew Vince were able to change around their work schedules so they could stay with us too.

We hiked around Spooner lake with the two dogs and stayed nice and cool in the tall trees. The dogs loved getting in the lake while we watched for local birds like the white headed woodpecker, kestrels, steller’s jay, barn swallows and many others. Birding is one of my favorite hobbies and it’s fun to find new species when I travel.

Marie bought me a “birthday” marion berry pie from Ikeda’s and it was scrumptious. She and my sister wanted to bake me a cake, but that’s a tall order to make a cake for a pastry chef. And we were all having so much fun playing outside and relaxing on their deck to bake in a hot kitchen.


The highlight of the trip was hanging out at the Northstar California Resort. They offer mountain biking, hiking, golf, Kids Adventure Camp, Mini Golf, and something called Kid Zone. There’s even a roller skating rink open during the summer for families that like that kind of thing. What we loved were the full body massages that were offered by Jackie at Tahoe Yoga and Wellness Center. This business gives yoga classes too, some of which I have attended.  Marie and I made appointments that morning and got right in. Now that’s the way to end a fun getaway weekend feeling all relaxed and pampered.

Next we drove up the hill to explore lunch options at the Ritz Carlton Lake Tahoe. After all we were celebrating my birthday weekend and I’m always up for checking out 5 star hotels. This place was incredible inside and out. Very family oriented also, the outside seating at the Manzanita Restaurant included frisbees so kids could play in the nearby grass while waiting for their food. What a luxury to be able to have a conversation with your spouse and know your kids aren’t bored out of their mind. And they had a art show displaying famous artists inside the hotel.

The food was simple but delicious. The three of us shared the turkey club served warm with organic turkey, gruyère cheese, pecan-wood bacon, pickled onion, lettuce, tomato, and herb Mayonnaise. We also ordered the Mediterranean salad with loads of salty goat cheese, cherry tomatoes and nicely brined kalamata black olives.
It was exciting sitting outside when the rain started to come down in buckets. We were under a covered patio, so it was pleasant enough. We realized that anything can happen when you are in the mountains at high altitude. Taking time to visit with my niece and nephew on this vacation was priceless. We are so lucky to have family that lives in the Truckee area. Maybe next time our own kids will join us.

Fennel, Chive and Heirloom Tomato Green Salad

 

Ingredients:

1 Head of Organic lettuce washed and torn to large bite sized pieces

1 carrot peeled and shredded

¼ bulb fennel sliced thinly (saving the dill like fronds to top for decoration)

2 T chives finely chopped (saving the florets for top to decorate)

1 C chopped red and yellow heirloom tomatoes from the garden

 

Directions:

Place greens in a large bowl. Sprinkle remaining veggies onto greens and toss saving dill fronds and chive florets for the top. Place salad plates in fridge earlier in the day. 

Serves 7

Apricot White Balsamic Salad Dressing

 

Ingredients:

 

1 T Dijon Mustard

2 T Organic Blenheim Apricot Preserves

¼ C White Balsamic Vinegar (or Champagne Vinegar)

1 T grapeseed oil

1 t minced shallot

2 t minced garlic

1 T local honey

1 orange/lime/ or lemon freshly squeezed

½ C Extra Virgin Olive Oil

Salt and pepper to taste

 

Directions:

In a small saucepan, saute shallots and garlic in 1 T grapeseed oil on medium heat until soft and translucent. Add honey.

Place dijon mustard and apricot jam in a small to medium size bowl. Add sauteed shallots, garlic and honey. Add balsamic vinegar, citrus, salt and pepper and stir. Slowly incorporate olive oil in a steady stream while whisking. Set in fridge until ready to eat salad. Nothing worse than bruised and wilted lettuce, so don’t put dressing on until last minute and toss lightly after pouring dressing around edges of inside of the bowl. This way, all lettuce gets covered evenly.

Have a Little Art, Wine and Plenty of Pastries in Carmel California

This is my artist friend Margery and mutual friend Heidi who owns Hippievibetribe.com a bohemian clothing an accessory online store

 My husband and I took  a day trip to Carmel last weekend to see a dear friends’ art show at Anthony “Tony” Vanderploeg’s  Amsterdam. Margery Ammond and I have been friends for many years. She and I met at the neighborhood book club. We spent many hours together pouring over books, as Margery has always been an avid reader. Turns out, Margery is also a fabulous artist.

But that wasn’t a surprise to me. About 15 years ago, my siblings and I purchased a beautiful painting of Margery’s that was a scene from the Senanque abbey near Gordes France. This portrait oil painting has a huge field of lavender flowers with an abbey in the background. Simply exquisite! My Mother keeps the colorful mural over her fireplace, since lavender flowers are her favorite.

As you can see Margery’s new pieces are just as gorgeous. This time she paints pictures of butterflies along with gorgeous flowers from her garden. Outstanding work. In the past, she has focused on paintings of vineyards in Napa, and Healdsburg, scenes of Mount Diablo, gorgeous landscapes of Lake Tahoe and also earlier pieces of still lifes of fruit and silver.

I have a huge appreciation for people with these amazing creative skills as I can’t draw a stick figure. But that’s okay, we all have our strengths. Mine happen to be more culinary oriented. And I can’t forget when Margery generously donated her quality pots and pans to me since she bought a new stove which required a whole new set of cookware. So thoughtful of her!

Margery also displays her art in Truckee California at Art Obsessions, in Canada, and in Europe as well. I’m sure you will fall in love with her art like I have. She enjoys painting as a hobby and works very hard on her craft 4 days a week. She loves what she does and it shows. She paints for the joy of seeing vibrant colors on a blank canvas. We met for lunch today to get caught up since she doesn’t attend the book club meetings anymore. She’s too busy painting! Margery‘s smile radiates through the room and she brings joy to everyone around her. How lucky I am to have met her and to have gotten the chance to see her latest art show.  

If you make a trip to Carmel, be sure to check out the Carmel Bakery. Ken and I stumbled into this special place along our walk through the streets in that cute little town. Since my husband and I had to cut our visit short, we grabbed an ice cream cone and few pastries for the car ride home. This bakery was EVERYTHING! I practically bought one everything that I laid my eyes on. The cherry turnover was delish, as well as the raspberry strudel pastry that my husband devoured before I could get a bite. Of course, I had to taste their gingerbread cookie too. A little disappointing actually. Not as gingery as I would have liked plus it was somewhat dry. The hot chocolate didn’t blow me away,  but it was good and chocolatey nonetheless. I bought my hubby the cheesy pretzel since he loves bread and he gobbled it up right away.

You won’t want to miss out on a day trip to Caramel where you can enjoy lots of art galleries (65 total), get in a winery or two, or grab a coffee from the local bakery before heading out of town. It’s a happening place and worth the two hour drive down the coast.We didn’t make time to visit a winery, but walked by Albatross Ridge and I was sooo tempted.If I didn’t need to help with the driving, I would have been all in.

We even took my son’s dog Hank for a walk on the beach.Caramel is a  dog friendly town, it seems everyone has a puppy. Hank was hoping I would drop my ice cream cone, so he could have a lick or two. That wasn’t going to happen because I’m a mocha almond fudge freak. I’m obsessed.And I didn’t even have to share because my husband doesn’t like chocolate! Score. More for me!

How we [ate and drank]our way through the Food and Wine Festival in Disneyland

Had a wonderful time vacationing with several family members two weeks ago in Disneyland and Universal Studios in Southern California. The Disney trip is an annual trip that my sister in law Kathleen organizes (there’s 4 nieces, two sister in law’s and my brother in law) and we were all lucky enough to eat, drink and play our way through the California Adventure Food and Wine Festival together. My boys and husband never want to go. I think they are crazy to miss out on all the fun.

Of course I took tons of pics of the food, the kiosks and what they offered and I was able to sneak a photo with Daniella Malfitano who was getting ready for a cooking demonstration. We tried just about everything from Fried Artichoke Carbonara to their Popcorn Lemonade Cocktail made with Agave Silver Tequila. The Mac and Cheese dish was a big hit and I thoroughly enjoyed the Roasted Asparagus Caesar with crunchy buttery croutons.

My niece Jamie was excited to see her College town Chico written up as where the first American Pale Ale was created in 1980. Both of my sisters and another niece Marie also graduated from Chico state so I’m a huge fan. I didn’t know that Sonoma California had the first microbrewery in 1977 made from old dairy tanks. And as of 2018, there are over 900 craft breweries operating in my home town state of California.That’s a lot of BEER. Plenty of Mimosa Flights were enjoyed by my niece’s Laura and Michelle and they especially loved the Pineapple Juice and Chandon Brut Sparkling Wine.We indulged in the cheese from the Point Reyes Farmstead Cheese Company , Vella Cheese Company located in Sonoma, and the FisCALini Cheese Company located in Modesto because who doesn’t love cheese.  In fact, I hope to serve a cheese platter on Easter which is this weekend! Maybe I can pick up a few varieties and serve them with my Blenheim apricot jam, candied walnuts, dried fruit and some garlic and olive oil baked sourdough toast. 

This Festival presented by CA Grown had Beverage Seminars, family friendly demonstrations and programs with Jr Chef competitions daily. There’s truly something for everyone at the Disney California Food and Wine Festival.

We were so excited to learn about the upcoming Pixar Pier featuring an high speed Incredicoaster and a Paint the NIght Parade with characters Violet, Dash and Jack-Jack. I can’t wait. Coming to theaters in June is the latest Incredibles 2. I will definitely be making plans to see that movie.

Cinnamon Rolls with a Boosey Twist Recipe and (Bay Area Restaurant Reviews)

 

A couple of weeks ago my husband and I went for a bike ride into downtown Walnut Creek for Valentines Day. I had issues with my Apple iPhone that needed to be resolved so we decided to enjoy the day by riding into “the Creek.” It was a beautiful Spring like day and we both needed some exercise. Since we are practically empty nesters we aren’t running our kids to basketball games, soccer practice or baseball tournaments anymore. Instead we can leisurely take our time on the weekends and go on a hike or bike ride together. Last weekend was no different. The photos above were taken while I worked as a preschool teacher at Tassajara Learning Center.

After our iPhone appointment, we took a chance for a quick bite to eat at True Food Kitchen. This place is usually packed, but we got lucky and landed two spots at the juice bar. I have heard great things about their restaurant from my hiking friends who frequently come here to celebrate birthdays. Excited to learn about the menu, the bartender walked us through the gluten free, naturally organic vegetarian, and vegan menu offerings explaining that they focus their food on anti inflammatory dishes. Dr Andrew Weil believes that by eating this healthy diet, people can avoid Alzheimer’s, heart disease and many cancers. I’m all for that.

What I was most excited to learn more about was their fresh juice drinks. They actually have a hangover drink  that has fresh pineapple juice, orange juice, honey, and coconut water. I have no idea if that would help a hangover, but I bet it is a big seller. Of course, I saw plenty of a few Bloody Mary’s being served which looked gorgeous with watermelon radishes used as a garnish.

I ordered the “Bright Eyes” which consisted of fresh pear, ginger root, beet, pineapple, turmeric and carrot juice, and it didn’t disappoint. We also tried the Inside Out Quinoa Burger made with hummus, tzatziki, tomato, butter lettuce, cucumber, red onion, feta and avocado. It is served alongside a generous portion of roasted butternut squash which my husband loved. I tried the Toast with winter squash, brussel sprouts, caramelized onion, lemon, saba and roasted hazelnuts. It was an unexpected delight being crunchy and yet sweet from the squash that was probably roasted with honey or maple syrup. Yum. I had to order light so I could make it back up the hill to our house on my bike!

I have to say, I’m usually not a huge proponent of these restaurants since I think they are a “fad” or “trend” to for the younger generation. After all, I love a good burger. But it’s nice to eat extra healthy once in a while and my husband was thrilled with his Mediterranean dish. We found Opa Restaurant last week for a quick weeknight dinner. Ken was so happy to find this place because they serve lamb, chicken and beef sandwiches in a warm pita bread with tzatziki sauce tomatoes, onions and mint. He said it was his very favorite new place and that says a lot because he can be finicky.

While I’m at it, I may as well give a review of a fairly new restaurant located in Danville called Harvest. My friend Barbara and I met there a few weeks back after quick jont on the Iron horse trail. This place does things right. Barb and i met several years back when we our kids were at San Ramon Valley High School together in the choir. We also were both involved in the Vista Oak Chapter of the National Charity League. She volunteering with her daughter Lauren and me with my niece Jasmine. We had many good times together when our kids were young and now continue to meet up and have an occasional lunch or breakfast together. Barb recommended Harvest so we gave it a try.

First our server brought us a platter of their delicious wheat bread with a dollop of creamy butter with smoked sea salt and chives. I judge most restaurants by their bread and theirs  was to die for. For lunch, I ordered Di Stefano’s Burrata Toast cause I have to have burrata whenever I’m at a restaurant. This dish was the perfect balance of sweet, salty, creamy and chewy presenting the burrata along side prosciutto, figs and well dressed arugula. Delish! Barbara and I also shared the Harvest Cobb which the chef was nice enough to divide. The chicken was brined with a lemon sweet tea before it was flawlessly grilled and served with avocado, hard boiled egg, tomato and bacon. We passed on dessert even though their warm apple cobbler sounded appetizing. Over all, I have to give all three of these restaurants a thumbs up and we will definitely make it back for future visits.

It’s a good thing my phone is repaired and I’m back to blogging and taking photos again. I’d better get myself back home now and prepare a little something for the family.

But first here’s my recipe for Cinnamon Rolls with a Boosey Twist

Ingredients for Dough

¾ C Sourdough starter (I made my own from 2 C pressed grapes in a tea towel, 2 C flour and 2 C water and let ferment for 1 week in a large glass bowl stirring every day) Not needed to make recipe, but adds a nice sour note to the recipe. Place in stand mixer fitted with flat beater. Mixes better than dough hook)

½ C warm water (warm to touch)

1 T yeast (Red Star Rapid Rise or regular dry yeast)

1 teas honey or 1 t granulated sugar

Mix these ingredients together in a small glass bowl with your fingers and let get bubby and add to mixer

 

1/4 C sourdough starter (not necessary, but makes them have a sour taste)

2 eggs room temperature

3/4 C Milk (warm on stove until luke warm, not hot) Or use milk powder which i always have on hand

2 T soft unsalted butter (plus 1 T to smear on glass bowl when rising)(plus 1 T for baking dish)

1 T Kosher Salt (do not forget this!)

¼ c granulated sugar (plus 1 t more for yeast)

1 Tablespoon Molasses (Adds a nice caramel flavor)

2 C Bread flour (maybe ¼ c more for kneading and rolling out)

1/2 C Whole Wheat Flour

 

Filling for Cinnamon Rolls

½ C unsalted softened butter

½ C granulated sugar

1 C brown sugar

1 T cinnamon

1 t ground ginger

½ t Maldon Salt

½ t ground cardamom

½ t ground espresso powder optional

1 T tapioca flour

3/4 C toasted pecans

 

¼ C Grand Marnier

½ C water

1/4 C Golden Raisins

¾ C black raisins (Dried cranberries, dried strawberries or dried blueberries make for a fun new breakfast treat)

(Heat water in microwave in glass 2 c measuring cup and add grand marnier and soak raisins or dry berry fruit mix until soft) Drain and throw away liquid. This step allows the raisins stay moist and juicy in the cinnamon roll.

 

Glaze

1 T spiced rum or milk or water

1 ½ C powdered sugar

¼ t Maldon salt

 

Directions:

 

After placing Sourdough starter in stand mixer, add bubbly yeast mixture.

Add milk, egg and mix. Add in 1 C flour, mix and let stand for 5 minutes.

Then add salt, sugar, molasses and softened butter and mix again.

 

Little by little add remaining flour and mix on low speed until combined. Keep mixing on med to med high speed until dough is soft to touch and springs back when touched (about 8-10 minutes mix time) Or knead by hand until dough feels soft.

Place in a buttered glass bowl and cover with a buttered plastic wrap in a warm spot and let rise for an hour. I put mine in an oven with the light on to keep warm. Fold dough over itself 3 times while turning bowl. Let rise again for 30 minutes. (overnight works well)

Assemble rolls:

Roll out dough on a lightly floured surface into a large rectangle until about ¼ t thick. Spread softened butter onto dough.

Sprinkle with both sugars evenly, cinnamon, ginger, cardamom, espresso powder, salt and tapioca flour.

Sprinkle soaked and drained raisins and pecans over dough.

Roll the dough tightly by starting at long edge and form into a long log. Cut with a pastry cutter or serrated knife into 1 Inch pieces. Place in a buttered baking dish or sheet pan with rolls touching. Let rise in a warm place, or fridge if you can possible wait. I baked mine immediately and they rose well.

Otherwise place in a preheated 375 degree oven and bake until brown and bubbly about 17-25 minutes.

Cool slightly and spread rum glaze over rolls. (if you prefer a cream cheese frosting use 4 oz or ½ pkg cream cheese, ½ C butter, 1 ½ C powdered sugar, ¼ t Maldon Salt, and 1 t vanilla- Or Rum!)

I especially enjoy making these boosey treats for my husband and son on a lazy Saturday or Sunday morning. They love waking up to the intoxicating smell of these yummy treats and I do too.

Blackberry Turnovers and My Secret Get Away Spot

A little known fact about me that most people don’t know is that I write my blog at my gym. I belong to  Club Sport one of the nicest gyms in the Bay Area. It’s located about 20 minutes from my home and I like to come here to decompress. I know. Most people go to their gym so they can work out and get a good sweat on. Not me. I like taking an occasional spin class, yoga class or weight class here, but most of all I like to sneak away from home and write my blog.

No one interrupts me here. At home, I have to contend with my animals, kids and husband. I’ll be honest, my pets are high maintenance. As soon as I walk in the door, the dog and cats are dying to be fed. We have a doggie door that they use to come in and out of all day long. They have plenty of dry food to eat, but they demand canned food the instant I walk in the door. And it doesn’t stop there. My two cats are 12 years old. They will meow when they want to come in your room even if it is 6 AM. We could leave the bedroom door open, but my 14 year old dog has a doggie dementia and he walks around the house tapping his little paws all over the wood floors and it wakes me up.

This is why I am sitting in a comfortable chair at my gym near the hotel entrance where I’m not taking up a chair at the bar or cafe. It’s fairly quiet and I’m able to focus on the task at hand, writing my next blog.

 

People ask me why I post pictures of my food and write a blog. I guess at  some point I would like to own a bed and breakfast place. Maybe I will work in a professional kitchen again or teach cooking classes again. I’m not sure what’s in my future. For now, I love to bake and cook and share recipes.

 

Currently and for the past 7 months I have been working as a nanny. The job kind of fell in my lap. I wasn’t looking for an opportunity like this but it came along and I went for it. The baby is super cute and we are buddies. She loves spending time with me and I can’t wait to see her read her my newest children’s book. She’s the best baby, sleeping through the night for many months now and her parents are really cool animators at Pixar. They are wonderful people and I am lucky to share in taking care of their little one.

 

Many mornings last July I would walk the baby and pick wild blackberries from the running trail and make blackberry hand pies. These turnovers were to die for especially warm from the oven.

 

Who knows how long they will need me or if they will have more children. At least I have a job for now and am enjoying every minute I get to spend with the little one. Babies are a ton of fun and this one in particular has my heart. I’m finally able to cook for her some meals which makes me happy.

Here is my recipe for Blackberry Turnovers.

 

Pastry

3 C. Flour

3 T granulated Sugar

1 tsp kosher salt

8 Tbsp cold unsalted butter (1 stick)

¼ C. Shortening

3 Tbsp  H2O

1 egg, lightly beaten

2 tsp white distilled vinegar

 

Directions for making Pastry

  1.   In a  large bowl combine flour, sugar and salt. Using a pastry blended and working quickly to prevent butter from melting into flour, cut in butter and shortening until mixture resembles coarse crumbs. (or put mixture in food processor and pulse until combined) Another pie recipe here:Strawberry pie
  2.  In a small bowl combine water, egg, and vinegar. Stir to mix. With a fork, mix egg mixture into flour just until dough clumps together and moist enough to pat together. If dough is dry and crumbly, add more water 1 Tbsp at a time. Dough should not be wet or sticky. (I use the food processor and pulse until combined.)
  3.  Wrap and place in fridge for 30 minutes to rest.
  4.  Turn out dough onto a lightly floured surface and roll with pin to flatten

Blackberry Filling:

Pick two or three cups of blackberries (or purchase 2 fresh packages/ or buy a package of frozen blackberries and defrost and drain). You can substitute blueberries, apricots or peaches. Use whatever is in season.

Sprinkle 1/2 C granulated sugar (more if not as sweet), 1/8 C tapicoa flour, ½ t Maldon or Kosher Salt, 1 T lemon zest, and 1/2t nutmeg in a bowl of washed blackberries. Place about 1 t unsalted butter on each pastry before sealing w egg wash  (1 egg whipped in a small bowl. You can add 1 tsp water or milk if you wish. I don’t)

 

After rolling out pastry, cut into large circles or squares. Separate them by placing on parchment paper or tin foil on a baking pan leaving a little room (about an inch) in between. Scoop about ½ C onto each pastry and dot with 1 t butter. Fold over, seal, crimp with your fingers of with a fork before slashing with a knife in two places, brushing with egg wash and sprinkling them with a little turbinado sugar. Pop into a 400 degree preheated oven for about 14 min or until brown and bubbly.

Serve warm with vanilla ice cream or a cold glass of milk. These are great after school snacks or a quick breakfast on the go. They never make it till breakfast in my house.

Why You Should Go To Pike Place Market and Lemon Blueberry Bread

Spent an entire Sunday morning at Pike Place Market in Seattle Washington a couple of weeks ago. It was my first time visiting this incredible food market. I was blown away with the intense heavy scent of flowers that welcome you into the building. The sunflowers and dahlia’s were mesmerizing in size and were everywhere I looked. They sold spectacular flower arrangements for only $10.00 in every color a girl could ask for.

Besides walking past every kind of flower you could ever want, my husband and I tasted  Beecher’s handmade cheeseThe varieties of seasonal fruit were overwhelming finding juicy nectarines, plums, berries, sweet currants and cantaloupe just to name a few. We spotted boxes of colorful organic peppers and just around the corner and a collection of mushrooms some I’ve never heard of like maitake, eryngi, nutty shimegi, lobster, chanterell, and matsutaki  for the chefs delight. It was honestly a foodies paradise. I was in Heaven.

I was excited to spot Gosanko Chocolates  and check out their special chocolate offerings. They had dark chocolate rocky road, clusters of sunflower seeds coated in chocolate, peanut raisin, almond, walnut, and cashew  clusters. I spied red velvet, sea salt caramel and PB and J  fudge, and blackberry, strawberry, mocha, Irish cream, loganberry, peanut butter, limoncello, kahlua,grand marnier, cherry, rum and classic truffles. I wanted one of each! And of course I’m partial to almond butter toffee coated with dark chocolate. Yum! If I could travel around the world and just visit chocolate shops, I would. Most of the time I try their hot chocolate since this is always a measure of a good quality chocolate.

Next we came across local farm fresh Raw and Pure Honey and discovered wildflower and blackberry flavors. There were gorgeous really cool textiles like cotton scarves in bright primary colors and artists previewing their spectacular pieces.

Too bad we were staying at a hotel because I wanted to buy and cook the huge assortment of fresh caught trout, salmon, red snapper, rockfish, and halibut just waiting to be fried or grilled to perfection. The dungeness crab and jumbo king crab legs were enormous and reasonably priced. Apparently the cherries in Washington are abundant and family owned since 1988 Chukar Cherries Co. provided delicious chocolatey samples if you could stand waiting in the long line.

There was plenty of hot food for those that wanted a nibble with displays of fried chicken, tempura shrimp, corn dogs, chicken tenders and French fries. And of course we came across the bakery selling savory cheddar cheese rolls, chocolate dipped cookies, German chocolate and cream cheese strawberry donuts, Swedish cookies which my Danish great grandmother Helga “Nana in the white hair” is what we called her, would have wanted, cinnamon crispies (which reminded me of a pastry I had in Truckee. Here’s a previous blog with a gingerbread recipe I’m fond of and made recently)  and peanut butter cream cheese cannoli’s. Yuck.

I loved the lavender products offered by https://www.allthingslavenderseattle.com/.  Baker’s dream of ingredients like these: lavender sugar, lavender and sweet orange infused honey, and tea’s for ice cream, scones and other sweet goodies.

I bet you didn’t know I’m a cheese fanatic either. My sister Julie introduced me to cheese spontaneously many years ago and I fell in love. Pike Place Market has a good deal of delicious gouda, asiago, fontina, pecorino romano, parmegiano, and lots of soft cheeses too like chevre, sheep milk feta, burrata, mozzarella, and brie. I’m planning on making a roasted cherry tomato with burrata tonight for my family. I first experienced this at a fancy restaurant in St Helena. It was simply decadent. 

Britts Pickles sold us a jar of their spicy pickles, but unfortunately for my son Curtis they were confiscated at the airport. I’ve seriously have barely scratched the surface of what Pike Place Market in Seattle has to offer. If you haven’t been, it’s a must. This vacation get away was one of my favorite vacations ever. Great food, a hippie vibe/nerdy kind of people, and super fun hikes are awaiting you.

And just in case you are inspired to bake, you can find a tasty blueberry lemon bread recipe below. It’s one of my favorite breads to make and share with your friends and family, especially if you have an excess of lemons.

 

Lemon Blueberry Bread

Preheat oven to 350 degrees.

Ingredients:

½ C Unsalted Butter room temp

1 C Granulated Sugar

2 Large Eggs beaten

2 lemons zested and juiced and set juice aside

 

1 ½ C All Purpose Flour or Cake flour for a finer crumb

1 t Baking Powder

½ t Maldon Salt

½ C Milk

1 1/2 C fresh Blueberries

½ C Powdered Sugar

 

Directions:

In a mixing bowl cream the room temperature butter and granulated sugar for @ 3 minutes on high. Add lemon zest and eggs and blend for 4 more minutes on med high.

 

Sift flour, baking powder and salt until combined.

 

Alternately, starting with dry flour mixture then milk , add to wet creamed mixture in small portions and mix on low until combined. Toss in blueberries coated in 1 T flour.

 

Line a 9X5in loaf pan with parchment paper, or coat with vegetable shortening. Pour batter into pan and bake uncovered for @ 55 minutes or until a toothpick comes out clean.

While loaf is baking, juice lemons and mix with powdered sugar. When loaf is taken out of oven, poke with a wooden skewer and pour sugared juice over loaf. Cool.
